These days it seems anyone and everyone can be a celebrity or better known as reality celebrity.  Though when we watch these "celebrities" they are far from any sense of reality, as soon as they see the video camera with the red blinking light recording their every move, their life becomes less interesting.
This goes for the new fad of celebrity chefs.  What is a celebrity chef, and how do you become one.
Well first you will need to lower your expectations of self respect, selling out to major brands, showcasing overpriced products with your name on it in large retail stores whose common consumer can't afford in the first place, except when they put it on an 8 month layaway plan.  Second, be sure to not know a single iota of what your show is about.  This is key.  Make sure you have no training or knowledge of what your show is about, just rely on the real cooks in the back to do the chopping and prepping because the production team does not have the time or money for you to harm yourself on TV.  Ever notice that?  No cuts or burns, no band aids on any limbs to prove they did the dirty work.  I don't care how much of a professional you claim to be, if you are busting your ass in any kitchen you are going to endure some battle wounds.   The last thing may the most important to gaining success on TV, no matter what you think, your job is not to think, just follow everyone else.  How many versions of a hamburger does one need anyway?  Okay I get it you like to eat hamburgers.

So if you are willing to sell yourself image for the price of fame, put your mug on a box of crackers, and slap you approval on some random line of cookware to be sold where no one can afford it, then you to can be deemed as a celebrity chef.

So you went to your favorite sushi place to score some white tuna, wild salmon, and of course, sake.  What if the only thing that was worth that 50 dollar tab was the overpriced sake?  What if you found out your 5 dollar a piece of tuna was really esoclar?  Did you have the boom's boom's to top it off?
News breaking information about the fish we buy from overseas is not what it says it is, and even the fish experts can't tell the difference.  A study was conducted recently that tested the DNA of fish species that claimed to be cod, sole, wild salmon, white tuna, among others.  Only 1 out 5 tested were actually what they were labeled as, while the four were a cheaper fish species, yet sold at the price of the marketed price for top high end fish selections.  The United States alone purchase almost 99% of fish from overseas, and when the fraud fish was put in some of the top expert they could not tell the difference.  A scarier thought is less than 1% of fish is inspected for fraud or mislabeling.  The shrimp business also has some frightening facts.  I knew that we bought a lot of our shrimp/prawns from  Thailand, hell we even show cased it on the menu, Black Tiger Prawns.  Would you still buy it if you knew that the shrimp were processed on the side of a dirt road and not an authorized inspected processing plant?  I am positive many of you know about the dangers and health risks of farm raised fish, especially salmon, what may set you off even more is that you went out of your way to pay extra for the wild stuff, yet you too were trumped into buying the farm stuff.
So how do you know if you are really buying  the real thing?  It is not safe to bet on paying the highest dollar anymore or going to  a five star restaurant to ensure quality seafood, they may not even know that they are giving fraudulent fish.   There are some ways to try to avoid buying that fake fish offering to be what it says it is.  For wild salmon, the farmers have gotten pretty tricky with the dyes to make the salmon appear "real",  for this just look at the fat lines in the flesh this is a good indication if the salmon is wild.  For the shrimp fiasco, remember that little place called New Orleans?  Try to support them, and contact some shrimp companies down there, they could use the support.  The best way to know what you are purchasing is to actually see the fish whole, watch it get filleted, then purchase it, or if you want to shave a couple bucks off a pound buy it whole and fillet yourself.

Once again in this economy the US is trying to be cheap and go across seas for seafood, which is a billion dollar industry, while we have some of the best seafood here in the states.  Ever heard of Alaska or Hawaii?  I have and they have killer, fresh, and real fish and shellfish to purchase.  I would rather spend a couple bucks extra for the comfort of knowing where my fish is from, to know that when it says sole it is in fact sole, and the most important part, supporting my fellow fishermen of the US.  Have you ever seen what these guys go through just to get that fillet on you plate?
 I have and let me tell you their job is not for the weary or whiny.

Getting direct TV was like the best decision I ever made. My brothers are constantly stopping by just to say hey and they stay for hourssss and want to chat – I just don’t have time for all that business. Now when they stop by I just ask them to go in the living room and turn on some game and I get to keep my business up for the rest of the afternoon. I love them to death and I’m so glad they feel good enough about being around here that they can just stop by when they want but you know, I’ve got things to do a lot of the time and I don’t really like feeling bad about not being able to entertain them all afternoon. One of these days they’ll get married and stop mooching off me but until then I guess I have to keep being the good big sister and not kick them out of my house. We’re family, after all, and mom and dad would be so mad at me!

No baby yet! Sorry for the lack of blogging recently! I only have one week left until my due date and things are busy, busy, busy!

This morning, I finally had time to sit down and answer some emails from my blog readers/followers. I am so thankful that I took the time to do this, because it gave me inspiration for my blog post today!!

Today, I want to try and offer each of you some encouragement!! I receive emails on a regular basis from men and women who are trying to lose weight. I am so thankful for your willingness to be open and vulnerable about your struggles to lose weight. I appreciate your transparency so much!!

A pattern I’ve notice is that many of you begin your weight loss journeys and then within a month or two you are so discouraged that you already want to quit! Why are you so quick to throw in the towel? It’s so hard to read emails like this, because I know that if you stick with your weight loss program you will be successful. I know what it feels like when you don’t think you are getting anywhere, but I do not think that’s a reason to give up.

Below are three different ideas that you can try if you experience discouragement along your weight loss journey. These things helped me so much in my own journey and I know that they will work for you too!

First, you need to adjust your expectations. Healthy, long-term weight loss is slow. I know that none of you want to hear this, but it is true. You did not put on your weight in one night and you won’t be able to take it off that quickly either. If you are coming into your weight loss journey thinking that you will lose 4-5 pounds per week, you need to readjust your expectations so that you can avoid discouragement. Take time to create healthy and realistic expectations for yourself!

Second, celebrate EVERY victory, no matter how small you think it is!! You must being to change your mindset if you are going to be successful in your weight loss journey. A loss on the scale is a loss…period. I have heard from you all in emails and from my own Weight Watchers members that they, “only” lost 0.2 pounds. I know that you get frustrated that you did not lose more weight. However, please remember that loss is a loss. All of those 0.2’s and 0.3’s eventually begin to add up to whole pound! Change your attitude and begin to be thankful for those small amounts of weight that you lost, knowing that eventually it will add up to something bigger.

Finally, do not give up. You must keep persevering! You are worth it, no matter how much time it takes to lose weight! You need to become committed to your weight loss journey no matter what! Do not believe lies about yourself that you cannot do this, because it’s not true! It takes 21 days to make something a habit in your life. That’s quite a bit of time! Be patient while you learn to undo a lifetime of bad food choices. This was so important for me while I was losing weight in 2008-09, because I did not care how long my journey would take me. It didn’t matter, because I had already decided that I would be on Weight Watchers no matter how long it took me to get my weight off. Are you truly committed to your weight loss journey?

It is okay to be frustrated, especially when you are following the program and it does not seem to be working the way you thought they would. Just don’t let your frustration lead you to quit your weight loss journey, before it has really begun!

Okay okay, if you must know Why we celebrate this silly holiday called Valentine's Day, let me interpret briefly. Valentine's Day began with a priest, St. Valentine. Rumor has it that during the third century in Rome, Emperor Claudius Ii decided that singular men made better soldiers than married men and thus outlawed marriage for young men. Recognizing the injustice of this, St. Valentine continued to marry young citizen in inexpressive and was imprisoned and ultimately killed. Other rumors say that St. Valentine helped Christians escape harsh Roman prisons and that he may have even sent a love letter from prison to an admired woman, signed "From Your Valentine." As St. Valentine was later a favorite saint in France and England, Valentine's Day became popularly renowned in the seventeenth century. In 1840, the first mass-produced "valentines" appeared in America. Today, 85% of Valentine's Day cards are purchased by women. Is this because men are buying flowers?

Boycott this Silly Holiday and Spoil Yourself!

Chocolate Foot Spa

Here is a list of "needed" supplies for an indulgent foot spa experience.

Ingredients

Marbles

A foot basin

Whole milk

Vanilla extract

Chocolate extract

Brown Sugar

White sugar

Olive oil

Directions

Put a handful of marbles in the foot basin or any large holder to soak your feet in. Fill halfway with cold water. Warm sufficient whole milk to fill the basin and whisk until frothy. Add 1 Tbs. Each of vanilla extract and chocolate extract. Soak feet for 5 minutes while you are rolling them over the marbles. The lactic acid in the milk plainly sloughs off dead skin and softens them. Next, mix a handful of each brown sugar and white sugar with sufficient olive oil to form a paste. Massage this paste into the feet, ankles, knees and calves. Rinse with warm water and pat dry. Desist with lotion that has been warmed in the microwave. You can add a few drops of vanilla extract in your lotion to keep the vanilla scent on your skin.

Chocolate Bubble Bath

So sweet and indulgent, it's the perfect bath for chocoholics - but please, don't drink the bath water.

Ingredients

1 C. Unscented bubble bath

1/3 C. Unsweetened Soya Brand Milk

3 oz. Dark chocolate

Directions

Heat the Soya milk and add in the chopped chocolate, stir well until melted. Do not boil. Allow cooling down. Mix with the bubble bath and pour into your bath and enjoy.

Homemade Chocolate Truffles

This is a truly easy way to make a commonly complex dessert. Enjoy these while you are lounging in the tub.

Ingredients

1 12 oz. Pkg. Semi-sweet chocolate chips

1/4 C. Orange-flavored liqueur or 1 tsp. Orange extract

1 can chocolate or fudge frosting

Toppings: Coconut, chocolate sprinkles, ground nuts and cocoa

Directions

Melt chocolate chips in medium saucepan over low heat, stirring constantly; remove from heat. Stir in orange liqueur and frosting; blend well. Refrigerate 1-2 hours or until firm. Place coconut or other toppings in pie pan. Scoop combination into 1" balls; drop onto topping. combination will be sticky. Roll to coat. Place in foil candy cups, if desired. Store in refrigerator.

Yield: 6 dozen

Love Bites

Ingredients

1 shot vodka

Splash of peach schnapps

Equal parts cranberry and grapefruit juice.

Lime for garnish

Directions

Mix together all ingredients and pour over ice. Ornamentation top of glass with a lime wedge.

Some Essentials for Spoiling Loved Ones

Flower Meanings- Every flower has a meaning, many of which have endured for centuries. So unless you want to give a woman the seal for mourning this Valentine's Day, make sure you look into these meanings before picking a bouquet. Not only will you have the perfect gesture with the flowers, but you'll impress that extra man with your knowledge. He or she will think you are quite thoughtful (just don't let on I told you).

Amaryllis or Iris- Both of these flowers are perfect for the artists or actors you know. Amaryllis is dramatic and the iris is inspiring.

Carnation- To be blunt, many women view carnations as a "filler flower," but if you know this man likes carnations go with yellow or pink. These express cheerfulness and gratitude respectively.

Gardenia or Day Lily- Symbolizing joy and enthusiasm respectively, these are great universal flowers to brighten anyone's Valentine's Day.

Lilac- Have a serious case of puppy love? Lilacs are the seal for first love. Your spouse or fiancé will giggle.

Pansy, Yellow or Red Tulip- While all these flowers are gestures of love, the pansy is the least strong, and the red tulip is a great first declaration. Yellow denotes a hopeless romantic devotion.

Rose- Red roses are the extreme gesture of passionate love. If you have only been dating a short time, this is too strong a gesture. White roses are a seal of lucidity (making them particularly favorite at weddings). Pink roses symbolize friendship. A combination of red and white denote unity, manufacture them perfect for a married couple of many years.

Sunflower- These unique flowers show adoration. You can't help but smile when you see a sunflower.

Chocolate

Melting Chocolate- Because chocolate is very delicate to heat, you have to melt chocolate slowly, well-removed from heat. always heat chocolate over low heat or it will speedily become an unappetizing mass. Use a duplicate boiler, or place the saucepan with chocolate on top an additional one saucepan with boiling water on the stovetop. Keep in mind that chocolate will continue to melt even after removing it from a heat source, so be just not to overcook.

  • Unsweetened chocolate will truly liquidize when melted, but sweetened chocolate must be continually stirred.

  • Chocolate flavored coating contains cocoa and vegetable oil, rather than cocoa butter. Coatings are favorite because they are easier to use for things like dipping, but the taste and capability are nowhere near real chocolate.

Cherry Bubbles

Sweeten bath-time for the kids or for yourself with this yummy recipe.

Ingredients

1/2 C. Unscented shampoo

12 drops cherry fragrance oil

2 drops red food coloring

1/2 tsp. Salt

3/4 C. Water

Directions

Mix together the shampoo and water in a jar. Add the salt and stir again until the combination thickens up. Add the cherry oil and the red food coloring and stir the combination thoroughly once more. Bottle the combination until ready to use in your bath. To use; add 1 Tbs. To running bath water. Soak as desired.

Crafts for Kids (Compliments of our Rsvp writer Sarah Potts)

Valentines- Go out and buy a bunch of colored building paper and have a "card making" station. Have scissors, heart patterns, stickers and markers supplied so the kids can make their family and friends Valentine's Day cards.

Candy Lollipop Flowers- This is a great and non-messy action for children. All you will need is wrapped heart-shaped lollipops that you should be able to find any where in the seasonal section, green chenille stems and scissors. First have the children start at the top of the lollipop stick (just before the end of the sucker) and tightly wrap the chenille stem in a coil colse to the lollipop stick. Once this is done, cut off the extra chenille. You can use the extra piece or an additional one piece of chenille and wrap this colse to the stem as well to make the "leaf," just make sure the leaf is secure. There you go- your child can now have a fun bouquet of tiny hear shaped flowers to give to anyone.

Spoil Your Sweetie- In my mind, there is no greater gift for a loved one than a fancy meal. Here are a couple fancy menus perfect for Valentine's Day, and a few more ideas to inspire you.

Menu 1

Shrimp in Champagne Sauce With Pasta

This dish takes some effort to prepare, but is the perfect touch for a romantic dinner for your extra Valentine.

Ingredients

1 C. Sliced mushrooms

1 Tbs. Olive oil

3/4 lb. Medium shrimp, shelled

1 1/2 C. Champagne

1/2 Tbs. Garlic pepper seasoning

2 Tbs. Minced shallots or scallions

1 large tomato, diced

1 C. Heavy cream

1/2 lb. Dried thin spaghetti

3 Tbs. Chopped parsley

Grated Parmesan cheese

Directions

Sauté mushrooms in medium saucepan in hot olive oil over medium-high heat. Cook just long sufficient to publish mushroom juices and let them evaporate. remove mushrooms and set aside. In same saucepan, couple shrimp, champagne and garlic pepper seasoning. Over high heat, heat to simmer. When liquid just boils, shrimp are done. remove shrimp from cooking liquid with a slotted spoon immediately. Set shrimp aside.

Add chopped shallots and tomatoes to cooking liquid. Boil over high heat until liquid is reduced to about 1/2 C., practically 8 minutes. When liquid is reduced, add 3/4 C. Heavy cream and boil 1-2 minutes, until slightly thickened and reduced. Add shrimp and mushrooms to sauce; heat through. Taste and add more seasoning if needed. Meanwhile cook pasta according to directions on package. Drain thoroughly and return to cooking pot. Toss with remaining 1/4 C. Cream and parsley. To serve, divide pasta in the middle of two plates. Spoon shrimp and sauce over pasta. Ornamentation with parmesan to taste.

Strawberry Spinach Salad

If you have never tried mixing spinach and strawberries together then you must try this recipe. It is very easy and easy and so good.

Ingredients

2 Tbs. Sesame seeds

1 1/2 lb. Fresh spinach

1/3 C. Vegetable oil

1/3 C. Red wine vinegar

1 Tbs. Sugar

2 tsp. Minced green onion

1/2 tsp. Paprika

1/4 tsp. Worcestershire sauce

2 C. Fresh strawberries, washed, hulled and halved

Directions

In a 7 inch skillet over medium heat, stir sesame seeds until golden; set aside. Wash spinach thoroughly; dry on paper towels and tear into bite size pieces. Wrap and chill. Blend oil, vinegar, sugar, onion, paprika and Worcestershire sauce. In large glass bowl, mix together spinach, strawberries, dressing and seeds.

One Bowl Spicy Chocolate Cake

Don't be scared of the cayenne pepper and spice up your boring chocolate cake.

Ingredients

1 1/2 C. All-purpose flour

1 C. Sugar

1/3 C. Unsweetened cocoa powder

2 tsp. Ground cinnamon

3/4 tsp. Baking soda

1/4 tsp. Hot red pepper (cayenne)

1/4 tsp. Salt

1 C. Water

1/2 C. Vegetable oil

1 Tbs. White vinegar

1 tsp. Vanilla

2 Tbs. Confectioners' sugar

Directions

Heat oven to 350 degrees. Generously grease 8"-square baking pan. In medium bowl, stir together flour, sugar, cocoa, cinnamon, baking soda, hot red pepper and salt. Add water, oil, vinegar and vanilla. Beat with a fork just until all dry ingredients have been moistened. Bake cake 35 to 40 minutes or until town springs back when gradually pressed. Cool cake in pan 5 minutes. remove to serving platter. Cover and set aside until ready to serve. Just before serving, sift confectioners' sugar over top. Cut into 4 squares; cut each square diagonally in half to make 8 triangular pieces.

Yield: 8 servings

Menu 2

Crab-Stuffed Fillet Mignon with Whiskey-Peppercorn Sauce

Incredibly elegant and flavorful, this is the perfect meal to impress that extra someone. perfect for anniversaries, Valentine's Day or any day!

Ingredients

Crab Stuffing:

2 Tbs. Olive oil

1 tsp. Minced onion

1 tsp. Minced green onion

1 tsp. Minced garlic

1 tsp. Minced celery

1 tsp. Minced green bell pepper

2 Tbs. Shrimp stock or water

1 6 oz. Can crab meat, drained

2 Tbs. Bread crumbs

1 tsp. Cajun seasoning

Peppercorn Sauce:

1 1/4 C. Beef broth

1 tsp. Cracked black pepper

1 oz. Whiskey

1 C. Heavy cream

Steaks:

4 6 oz. Filet mignon steaks

4 slices bacon, cooked lightly

Salt and cracked black pepper to taste

1 Tbs. Olive oil

1 clove garlic, minced

1 tsp. Minced shallot

1 C. Crimini mushrooms, sliced

1 oz. Whiskey

1 tsp. Dijon mustard

Directions

To make crab stuffing, heat 2 Tbs. Olive oil in a large skillet. Sauté onion, green onion, garlic, celery, and green pepper until tender. Stir in shrimp stock, crab meat, bread crumbs, and Cajun seasoning. remove from heat, and set aside. To prepare peppercorn sauce, in a small saucepan over medium heat, couple beef broth and cracked black pepper. Simmer until reduced to 1 C., stirring frequently. Add 1 oz. Whiskey and 1 C. Cream. Continue simmering until reduced to 1 C. remove from heat, and set aside. To prepare steaks, slice a pocket into the side of each steak, and stuff generously with crab stuffing. Wrap bacon colse to side, and accumulate with toothpicks. Season to taste with salt and pepper; set aside. Heat olive oil in a large cast iron skillet over medium heat. Sauté garlic and shallot for 1 minute. Stir in mushrooms, and sauté until tender. remove mushroom mixture, and set aside. Place steaks in skillet, and cook to desired doneness. remove from skillet, and keep warm. Deglaze skillet with 1 oz. Whiskey. Reduce heat, and stir in peppercorn sauce and Dijon mustard. Add mushroom mixture, and Reduce sauce until thickened. remove toothpicks and bacon from steaks, and dispose steaks on a plate. Top with sauce.

Note: Partially cook the filets in the pan, and Desist them on the grill. This method works well with roasted red potatoes and a nice glass of wine.

Yield: 4 servings

Creamy Mashed Potatoes with Fresh Herbs

The perfect side dish to just about anything.

Ingredients

4 quarts water

1 tsp. Salt

3 - 4 lb. Golden potatoes

2/3 C. Cream

1/4 C. Butter

1 Tbs. Fresh parsley, finely chopped

Salt and pepper to taste

Directions

Bring water to a boil, add salt. Meanwhile, peel potatoes and slice in quarters. Place potatoes in boiling water and cook until tender. Drain water and mash. Add cream, butter, salt, pepper, and parsley. Serve at once. You may vary the herbs by substituting dill or chives for the parsley.

Carrots in Sherry

A sophisticated way to serve up this base orange vegetable.

Ingredients

2 lb. Carrots, scraped and quartered

1/4 C. Butter or margarine

1 tsp. Salt

1/8 tsp. Pepper

1/4 tsp. Sugar

1/2 C. Sherry

1-2 tsp. Minced parsley

Directions

Sauté carrots in melted butter, turning until well coated. Sprinkle with salt, pepper and sugar. Add sherry and simmer gradually for 5 minutes. Add water just to cover; simmer, covered, for 15-20 minutes or until tender. remove cover and cook over medium heat until most of the liquid has evaporated. Sprinkle with parsley before serving.

Yield 6-8 servings

Strawberry Fudge Truffles

These tiny goodies are perfect for a Valentine's Day gift or a romantic occasion.

Ingredients

6 oz. holder semi-sweet chocolate morsels

1/2 C. Almonds, toasted and finely chopped

8 oz. Cream cheese (at room temperature)

3/4 C. Vanilla wafer crumbs (approximately 20 wafers)

1/4 C. Smucker'S® Strawberry Preserves

Directions

In a small saucepan, melt chocolate over low heat. Put almonds in a small bowl. In a medium mixing bowl, beat the cream cheese until plane and creamy. Add melted chocolate, beating until smooth. Stir in vanilla wafer crumbs and preserves, mixing well. Cover and chill combination for 1 hour. remove from refrigerator and shape combination into 1- inch balls or "truffles." Roll each truffle in the almonds; chill truffles until serving time.

Yield: 48 truffles

Hershey Kiss Roses

This Valentine's Day, give your sweetheart a bouquet she'll truly love: chocolate!

Ingredients

10 wooden skewers or 18-gauge florist wire

Red and silver Hershey Kiss candies

Green florist tape

Silk green leaves with wired stems

Directions

Pull tiny labels from each Hershey Kiss. Stick two foil- wrapped Kisses together, lowest to bottom. Insert the skewer into the tip of one Kiss and at this point begin winding florist tape down the skewer. Add several leaves along the way.

Cherry and Chocolate Pastry Hearts

Ingredients

1/2 of a 17-1/4-oz. holder frosty puff pastry (1 sheet), thawed

3/4 C. Cherry pie filling

8 tsp. Fudge ice-cream topping

2 Tbs. Chopped nuts

Directions

On a lightly floured surface, unfold thawed pastry. Using a 3-1/2- to 4-inch heart-shaped cookie cutter, cut pastry into shapes, discarding pastry scraps or reserving for an additional one use. Place pastry hearts on an ungreased baking sheet. Bake in a 375 degree oven for 15 to 18 minutes or until puffed and golden. Cool on racks. Split hearts horizontally; fill each with some of the pie filling. Place hearts on sweetmeat plates. Drizzle with fudge topping and sprinkle with nuts. Serve immediately.

Yield: 8 servings

Tip: prepare pastry hearts; cool. Place in airtight freezer container; place crumbled paper towels colse to hearts to prevent breaking. Seal, label, and ice up to 2 weeks. Thaw at room climatic characteristic before serving.

A little TLC will benefit your hair enormously. Don’t overdo the chemical treatments that it is subjected to and, even if you condition every time you wash, it will still appreciate a deep conditioner twice a month. If you live in a hard water area use a product, such as Pantene’s Pro V Clarifying Shampoo every week to get rid of the build up of minerals. Whilst on the subject of washing your hair, wet hair is more likely to stretch and break than dry hair so be careful to use a wide toothed plastic comb rather than your normal hair brush. If you use a hair dryer use the diffuser attachment so that your hair is less likely to be damaged by excessive heat.

For healthy skin adequate sleep is essential as it is during this time that skin cells are renewed. Aim for at least eight hours a night. One of the most damaging things for your skin is excessive exposure to sun. Always use a moisturiser with a factor 15 protection, even in the winter, and if you are out in the sun for prolonged periods use a sunscreen of at least factor 30. Stick to a good cleansing, toning and moisturising regime. This needn’t cost a fortune with many products available from the likes of Nivea and Olay for between £2 and £7.

Here are our tips to have a fantastic day but come out of it with the bank balance still intact.

- Whilst it is nice to have a glass of bubbly before the meal it needn’t be champagne. Try a bottle or two of prosecco or cava instead or forsake the bubbles and make a jug of mulled wine. Have a look on the internet for printable coupons and you could save on your drinks.
- If you have the money, then a starter of dressed lobster is delicious. However, prawns or smoked salmon are equally tasty and if you put them on a bed of lettuce or on top of blinis they also look very attractive.
- Not everyone can afford a fresh turkey and there is nothing wrong with cooking a frozen bird. Just make sure that you get it out of the freezer in plenty of time.
- Cooking it slowly, covered in foil, on a rack over a tray of stock makes sure that it does not dry out and the stock makes scrumptious gravy which will compensate for the fact that frozen birds are sometimes less tasty than fresh.
- You’ve done the hard work so why not ask a guest or two whether they would mind bringing a pudding (traditional Christmas pud or something else) or a cheese board?

If you’re looking for a change from the usual sausages and burgers that are served at barbecues why not add an Asian touch to your food?


Instead of your favourite marinade you could add flavour to your chicken or pork with teriyaki or hoi sin sauce. Alternatively spice rubs, such as five spice or a tandoori mix can be rubbed on to your meat to add extra flavour. Either rub the spices on dry or mix with a small amount of oil to make a thick paste.

Spareribs are great on a barbecue and there are recipes galore on the internet. One of my personal favourites contains black beans, chillies, soy sauce and brown sugar.

If you like your food to have a kick then look out for jars of Szechuan peppercorns which, combined with chilli in a marinade, gives your food a hefty kick. Lamb cut into chunks and marinated for a few hours can be threaded on to skewers and alternated with jalapeno peppers before barbecuing. Serve with a yogurt and cucumber dressing to temper the heat if you feel you may have been heavy handed with the spices!

The Asian influence needn’t stop with your meat either: instead of a green salad, potato salad or coleslaw you could prepare a noodle salad, a Chinese potato salad with chilli paste and sesame oil or a coleslaw made with bok choy instead of your usual cabbage and a rice vinegar dressing. If you like Indian food you could make a batch of spicy basmati rice or a side dish of aubergines cooked with tomatoes and a selection of spices, as accompaniments to your main dishes.

I don't know about you, but I find it pretty much impossible to go on a diet. When you enjoy eating food and you're a fussy eater, there's nothing more difficult than trying to cut out all the things you love from your daily meals.

I hate to play favorites but there are just some brands that work better than others and working in a professional kitchen for over 15 years, I know how to abuse a few things. Okay a lot.  Between baking, mixing, tenderizing, chopping, emulsifying, and many other daily tasks performed in the kitchen, I have tried them all, both cheap and on the high end, and when you are prepping for over 600 people the last thing you want or need is for the equipment to keel over.

Kitchen Aid is my top fave.  Not only do they back up their warranty, but their products are very durable.  If I can grind over 50 pounds of beef with the basic standing mixer in an hour, that says a lot about the company.  They also have a ton of attachments for their standing mixers, although you need to make sure you purchase one that allows it.  Now Kitchen Aid makes other kitchen appliances although I just stick to the mixer for now, I don't want them to catch on I pulverize all of my kitchen appliances banning me from their warranty policies.  I do like their website because you can see a demo of the kitchen appliance in action as well as the attachment you want to check out before buying.

While other "off" brands offer various types of small kitchen appliances just remember you get what you pay for, although if you are not sure about the amount of use you will actually get out of your desired kitchen appliance you can check out sites like amazon and ebay that offer used equipment for a fraction of the cost.  I do recommend this for the first time buyers, there is no need to break the bank for an appliance you will not use at least 3 times a week.

The best steak to me means a well marbled, piece of beef that weights in at least a pound.  While this is the ultimate debate amongst men, grill masters, and chefs alike. you will find some say the ribeye meat is the superb selection while others argue that nothing beats the filet Mignon.   I will always recommend a bone it rib eye, cowboy steak, scotch steak, how ever you want to name this well marbled piece of meat and that's the key word there, well marbled, which means you can see the fat lines all through out the steak and when prepared right the meat will melt like butter.  For those who are not familiar with the cut, think of prime rib, rib roast, BBQ beef ribs, this is the rib eye meat while the beef ribs are the "bone in" bone part.  What is the best way to cook the best steak, well that is for another day, and another debate.  More on the best steak

Kosher Versus Iodized Salt

You may have seen the big box of Kosher salt when trying to grab your usual container of regular table salt or proper name, iodized, wondering what the heck is that, and where's the rabbi who has to blessed this?  (True fact there are kosher stores that do employ a rabbi for him to bless foods in the store)
No, kosher salt has not been blessed  by a rabbi, it refers to the way the Jewish prepare their meat, they pack it with large grained salts to remove any traces of blood.
So iodized salt. if you noticed is finer in grain and has been refined with additives to help it shake freely as it does.  The two don't not promise a lower sodium content, but as a professional chef I do prefer cooking with kosher salt.  One because I want to look as cool (not really) as the chefs on TV and  two it has a less "burning" after taste in the event you may over salt your food. 
You do have to admit once you pinch a little kosher salt over your food creation, you kinda feel a little cooler.

Kitchen tip:  In case of fires, kosher salt works wonders along side baking soda to put the flames.

Weight Watchers and My Pregnancy - Update

I blogged about Weight Watchers and My Pregnancy back in February. Since then, I have been receiving emails and comments from many of you who want to know how my weight gain is going. The most recent message I received was from Kristen, who just discovered that she was pregnant herself! This is not the way she thought her weight loss journey was going to go, but she is excited about the new addition to her family. Kristen had one question for me, "Can you offer any advice about how you were able to maintain your health and weight during your pregnancy?"

As I began to write Kristen back, I was shocked at how much I had to write about when it came to my pregnancy and healthy living. So, I've decided to turn my email into a blog post! I hope that this will encourage and help other people like Kristen, whose weight loss journey's are being put on hold for little bundles of joy.

Before I begin, I want to make it very clear that what I am going to write is my opinion. It is NOT the opinion of Weight Watchers or anyone else. I am writing from my own personal perspective and opinion. I am not a professional nutritionist, just a woman trying to lead the healthiest lifestyle possible while I am pregnant.

With that being said, I think I should share with you that OFFICIALLY you cannot follow the Weight Watchers program while you are pregnant. A portion of the Weight Watchers health notice states, "Weight Watchers prohibits participation in its weight loss plan for children under the age of 10, those individuals with an active medical diagnosis of bulimia nervosa, those whose weight is less than 5 pounds above the minimum weight of the Weight Watchers Weight Ranges, and during pregnancy." As many of you already know the most important thing is for you to eat so that your baby can grow and be healthy. Like I said above, you may not officially follow Weight Watchers while you are pregnant. It is important to check with your doctor to see what he/she recommends that you eat throughout your pregnancy.
I felt like it is important to say these things, because I do not want any of you taking extreme measures to avoid gaining weight during your pregnancy. This is a sacrifice that we make as mother's while we share our body with our unborn child. Above all, it is a privilege to be able to provide for our child in this way.
For me, I could not let go of Weight Watchers completely. Maybe it's because I have been on this plan since 2008 and it has become a way of life for me. Or maybe it is because I am a Weight Watchers leader and try to continue to be an example to my members of healthy living. However, for some reason, I just could not let it go.
Throughout my pregnancy, I have been able to follow the principles of the Weight Watchers program, with permission from my doctor of course.
Exercise - I have been walking and exercising throughout my pregnancy. I walk at least 30 minutes 3- 4 times a week. This has been one of the best things I have done for myself and Olivia! I am 35 weeks pregnant and still have energy to move around and get things done. I think that this has been a result of my exercising. If you are pregnant and you do not exercise, I highly recommend that you get moving!
Good Health Guidelines - I continue to follow the principles of the Weight Watchers plan when it comes to my eating habits as well. I try to fill my day with fruits, vegetables, lean protein, whole grains, and more! I try to eat filling foods that keep me satisfied throughout the day.
Tracking - I have continued to keep track of my daily pointsplus values. It's not so that I will stay within a certain target number, but so that I will know what I am eating throughout the day. I did not want to default back into mindless eating again.
Weigh In - I know that the doctor weighs me in at each and every appointment. However, I have continued to weigh myself once a week to see how much weight I am gaining. This has helped me to know where I am at each week. It's not discouraging, but encouraging to know that I am gaining weight for my baby girl.
Please do not misunderstand me. I have not done this perfectly! I have given in to more cravings and splurges than I would like to admit. According to all the baby books I've read "healthy" weight gain for me is anywhere from 25-35 pounds. I am 35 weeks and so far I have already gained 36 pounds.
I am not frustrated with my weight gain, because I know that this is what Olivia needs from me right now. I am thankful that I have been able to continue my healthy lifestyle throughout my pregnancy, so that I can give my baby girl the healthiest start to life that I possibly can.
Just remember that there are lots of ways to continue to remain healthy throughout your pregnancy. These are a few things that worked for me. Always be sure to check with your doctor first!

Recipe Review: Egg and Cheese Breakfast Sandwiches

This recipe is another one the I found on Pinterest! I pinned it a long time ago, but I have never taken the time to make it. I thought that it would be too high in pointsplus values. This recipe ends up being about 6 pointsplus per sandwich. I thought that might be too high for breakfast, but it has actually done a great job of keeping me full until lunch time. You cannot beat that!

I think that the next time I make it I will try to find an english muffin that is less than 3 pointsplus per muffin. I have been enjoying these for breakfast all week and I cannot wait to make them again! They were not only easy to make, but they taste good too!

The ingredients

Just grab a muffin tin and spray each spot in the tin with cooking spray. Then crack an egg in each muffin area. Stick these in a 350 degree oven for about 10-15 minutes.

Given that I was making a bunch, I just sliced all of my muffins in half and laid them all out on a baking sheet. After about 10 minutes in the oven (you can toast these at the same time as your eggs are cooking).

Once everything has been cooked, you just have to piece it all together.

Take half of a muffin, add some cheese, add an egg, and apply the top half of the muffin. You could hit the sandwich with some pepper if you wanted or even some hot sauce!

After constructing my sandwiches, I stuck them on a baking sheet and put them all in the freezer, uncovered and unwrapped for about an hour.

Pull them all out after an hour or two and wrap them individually in plastic wrap or foil and then store them in a freezer safe plastic bag.

I ended up making 12 breakfast sandwiches that are ready for me to eat later on in the week!

I reheated mine in the microwave and it tasted great!!

Making the Sandwich Take half of a muffin, add some cheese, add an egg, and apply the top half of the muffin. You could hit the sandwich with some pepper if you wanted or even some hot sauce! I would never call this Fast Food, but its definitely a fast way to make food.
Now you have two options:
Eat Immediately  If you wanted to eat these right away, just stick them back in the oven for 5 or 10 minutes until they are warmed through and the cheese is melted and delicious.
Store for LaterIf you want to store these for later, stick all your sandwiches on a baking sheet and put them all in the freezer, uncovered and unwrapped. Leave them in there for about an hour. This will give them a chance to give off some moisture and also freeze a bit. If you were to wrap them up right away then there would be all kinds of liquid that would condense. But don't forget about them or they'll get freezer burned. Pull them all out after an hour or two and wrap them individually in plastic wrap or foil and then store them in a freezer safe plastic bag. They will keep for a few weeks without a problem.
*Tip for Heating (or Reheating)OvenFrom completely frozen to warm and melted, it’ll take about 25 minutes in a 350 degree oven.
MicrowaveI heated mine in the microwave for 1 1/2 minutes. Be careful, because with the microwave the muffin can get soggy.

It’s been a busy day already and it is not even lunch time!!I don't have a lot of time to blog, but I wanted to try and touch base with you all.

This morning, I had my weekly doctor’s appointment. Everything with both me and Olivia looks great and I am so thankful that we are healthy!! Just 29 more days until my due date!

No baby yet! Sorry for the lack of blogging recently! I only have one week left until my due date and things are busy, busy, busy!

This morning, I finally had time to sit down and answer some emails from my blog readers/followers. I am so thankful that I took the time to do this, because it gave me inspiration for my blog post today!!

Today, I want to try and offer each of you some encouragement!! I receive emails on a regular basis from men and women who are trying to lose weight. I am so thankful for your willingness to be open and vulnerable about your struggles to lose weight. I appreciate your transparency so much!!

A pattern I’ve notice is that many of you begin your weight loss journeys and then within a month or two you are so discouraged that you already want to quit! Why are you so quick to throw in the towel? It’s so hard to read emails like this, because I know that if you stick with your weight loss program you will be successful. I know what it feels like when you don’t think you are getting anywhere, but I do not think that’s a reason to give up.

Below are three different ideas that you can try if you experience discouragement along your weight loss journey. These things helped me so much in my own journey and I know that they will work for you too!

First, you need to adjust your expectations. Healthy, long-term weight loss is slow. I know that none of you want to hear this, but it is true. You did not put on your weight in one night and you won’t be able to take it off that quickly either. If you are coming into your weight loss journey thinking that you will lose 4-5 pounds per week, you need to readjust your expectations so that you can avoid discouragement. Take time to create healthy and realistic expectations for yourself!

Second, celebrate EVERY victory, no matter how small you think it is!! You must being to change your mindset if you are going to be successful in your weight loss journey. A loss on the scale is a loss…period. I have heard from you all in emails and from my own Weight Watchers members that they, “only” lost 0.2 pounds. I know that you get frustrated that you did not lose more weight. However, please remember that loss is a loss. All of those 0.2’s and 0.3’s eventually begin to add up to whole pound! Change your attitude and begin to be thankful for those small amounts of weight that you lost, knowing that eventually it will add up to something bigger.

Finally, do not give up. You must keep persevering! You are worth it, no matter how much time it takes to lose weight! You need to become committed to your weight loss journey no matter what! Do not believe lies about yourself that you cannot do this, because it’s not true! It takes 21 days to make something a habit in your life. That’s quite a bit of time! Be patient while you learn to undo a lifetime of bad food choices. This was so important for me while I was losing weight in 2008-09, because I did not care how long my journey would take me. It didn’t matter, because I had already decided that I would be on Weight Watchers no matter how long it took me to get my weight off. Are you truly committed to your weight loss journey?

It is okay to be frustrated, especially when you are following the program and it does not seem to be working the way you thought they would. Just don’t let your frustration lead you to quit your weight loss journey, before it has really begun!

Okay okay, if you must know Why we celebrate this silly holiday called Valentine's Day, let me interpret briefly. Valentine's Day began with a priest, St. Valentine. Chocolate Foot Spa

Here is a list of "needed" supplies for an indulgent foot spa experience.

Ingredients

Marbles

A foot basin

Whole milk

Vanilla extract

Chocolate extract

Brown Sugar

White sugar

Olive oil

Directions

Put a handful of marbles in the foot basin or any large holder to soak your feet in. Fill halfway with cold water. Warm sufficient whole milk to fill the basin and whisk until frothy. Add 1 Tbs. Each of vanilla extract and chocolate extract. Soak feet for 5 minutes while you are rolling them over the marbles. The lactic acid in the milk plainly sloughs off dead skin and softens them. Next, mix a handful of each brown sugar and white sugar with sufficient olive oil to form a paste. Massage this paste into the feet, ankles, knees and calves. Rinse with warm water and pat dry. Desist with lotion that has been warmed in the microwave. You can add a few drops of vanilla extract in your lotion to keep the vanilla scent on your skin.

Chocolate Bubble Bath

So sweet and indulgent, it's the perfect bath for chocoholics - but please, don't drink the bath water.

Ingredients

1 C. Unscented bubble bath

1/3 C. Unsweetened Soya Brand Milk

3 oz. Dark chocolate

Directions

Heat the Soya milk and add in the chopped chocolate, stir well until melted. Do not boil. Allow cooling down. Mix with the bubble bath and pour into your bath and enjoy.

Homemade Chocolate Truffles

This is a truly easy way to make a commonly complex dessert. Enjoy these while you are lounging in the tub.

Ingredients

1 12 oz. Pkg. Semi-sweet chocolate chips

1/4 C. Orange-flavored liqueur or 1 tsp. Orange extract

1 can chocolate or fudge frosting

Toppings: Coconut, chocolate sprinkles, ground nuts and cocoa

Directions

Melt chocolate chips in medium saucepan over low heat, stirring constantly; remove from heat. Stir in orange liqueur and frosting; blend well. Refrigerate 1-2 hours or until firm. Place coconut or other toppings in pie pan. Scoop combination into 1" balls; drop onto topping. combination will be sticky. Roll to coat. Place in foil candy cups, if desired. Store in refrigerator.

Yield: 6 dozen

Love Bites

Ingredients

1 shot vodka

Splash of peach schnapps

Equal parts cranberry and grapefruit juice.

Lime for garnish

Directions

Mix together all ingredients and pour over ice. Ornamentation top of glass with a lime wedge.

Melting Chocolate- Because chocolate is very delicate to heat, you have to melt chocolate slowly, well-removed from heat. always heat chocolate over low heat or it will speedily become an unappetizing mass. Sweeten bath-time for the kids or for yourself with this yummy recipe.

Ingredients

1/2 C. Unscented shampoo

12 drops cherry fragrance oil

2 drops red food coloring

1/2 tsp. Salt

3/4 C. Water

Directions

Mix together the shampoo and water in a jar. Add the salt and stir again until the combination thickens up. Add the cherry oil and the red food coloring and stir the combination thoroughly once more. Bottle the combination until ready to use in your bath. To use; add 1 Tbs. To running bath water. Soak as desired.

Valentines- Go out and buy a bunch of colored building paper and have a "card making" station. Have scissors, heart patterns, stickers and markers supplied so the kids can make their family and friends Valentine's Day cards.

Candy Lollipop Flowers- This is a great and non-messy action for children. All you will need is wrapped heart-shaped lollipops that you should be able to find any where in the seasonal section, green chenille stems and scissors. First have the children start at the top of the lollipop stick (just before the end of the sucker) and tightly wrap the chenille stem in a coil colse to the lollipop stick. Once this is done, cut off the extra chenille. You can use the extra piece or an additional one piece of chenille and wrap this colse to the stem as well to make the "leaf," just make sure the leaf is secure. There you go- your child can now have a fun bouquet of tiny hear shaped flowers to give to anyone.

Spoil Your Sweetie- In my mind, there is no greater gift for a loved one than a fancy meal. Here are a couple fancy menus perfect for Valentine's Day, and a few more ideas to inspire you.

Menu 1

Shrimp in Champagne Sauce With Pasta

This dish takes some effort to prepare, but is the perfect touch for a romantic dinner for your extra Valentine.

Ingredients

1 C. Sliced mushrooms

1 Tbs. Olive oil

3/4 lb. Medium shrimp, shelled

1 1/2 C. Champagne

1/2 Tbs. Garlic pepper seasoning

2 Tbs. Minced shallots or scallions

1 large tomato, diced

1 C. Heavy cream

1/2 lb. Dried thin spaghetti

3 Tbs. Chopped parsley

Grated Parmesan cheese

Directions

Sauté mushrooms in medium saucepan in hot olive oil over medium-high heat. Cook just long sufficient to publish mushroom juices and let them evaporate. remove mushrooms and set aside. In same saucepan, couple shrimp, champagne and garlic pepper seasoning. Over high heat, heat to simmer. When liquid just boils, shrimp are done. remove shrimp from cooking liquid with a slotted spoon immediately. Set shrimp aside.

Add chopped shallots and tomatoes to cooking liquid. Boil over high heat until liquid is reduced to about 1/2 C., practically 8 minutes. When liquid is reduced, add 3/4 C. Heavy cream and boil 1-2 minutes, until slightly thickened and reduced. Add shrimp and mushrooms to sauce; heat through. Taste and add more seasoning if needed. Meanwhile cook pasta according to directions on package. Drain thoroughly and return to cooking pot. Toss with remaining 1/4 C. Cream and parsley. To serve, divide pasta in the middle of two plates. Spoon shrimp and sauce over pasta. Ornamentation with parmesan to taste.

Strawberry Spinach Salad

If you have never tried mixing spinach and strawberries together then you must try this recipe. It is very easy and easy and so good.

Ingredients

2 Tbs. Sesame seeds

1 1/2 lb. Fresh spinach

1/3 C. Vegetable oil

1/3 C. Red wine vinegar

1 Tbs. Sugar

2 tsp. Minced green onion

1/2 tsp. Paprika

1/4 tsp. Worcestershire sauce

2 C. Fresh strawberries, washed, hulled and halved

Directions

In a 7 inch skillet over medium heat, stir sesame seeds until golden; set aside. Wash spinach thoroughly; dry on paper towels and tear into bite size pieces. Wrap and chill. Blend oil, vinegar, sugar, onion, paprika and Worcestershire sauce. In large glass bowl, mix together spinach, strawberries, dressing and seeds.

One Bowl Spicy Chocolate Cake

Don't be scared of the cayenne pepper and spice up your boring chocolate cake.

Ingredients

1 1/2 C. All-purpose flour

1 C. Sugar

1/3 C. Unsweetened cocoa powder

2 tsp. Ground cinnamon

3/4 tsp. Baking soda

1/4 tsp. Hot red pepper (cayenne)

1/4 tsp. Salt

1 C. Water

1/2 C. Vegetable oil

1 Tbs. White vinegar

1 tsp. Vanilla

2 Tbs. Confectioners' sugar

Directions

Heat oven to 350 degrees. Generously grease 8"-square baking pan. In medium bowl, stir together flour, sugar, cocoa, cinnamon, baking soda, hot red pepper and salt. Add water, oil, vinegar and vanilla. Beat with a fork just until all dry ingredients have been moistened. Bake cake 35 to 40 minutes or until town springs back when gradually pressed. Cool cake in pan 5 minutes. remove to serving platter. Cover and set aside until ready to serve. Just before serving, sift confectioners' sugar over top. Cut into 4 squares; cut each square diagonally in half to make 8 triangular pieces.

Yield: 8 servings

Crab-Stuffed Fillet Mignon with Whiskey-Peppercorn Sauce

Incredibly elegant and flavorful, this is the perfect meal to impress that extra someone. perfect for anniversaries, Valentine's Day or any day!

Ingredients

Crab Stuffing:

2 Tbs. Olive oil

1 tsp. Minced onion

1 tsp. Minced green onion

1 tsp. Minced garlic

1 tsp. Minced celery

1 tsp. Minced green bell pepper

2 Tbs. Shrimp stock or water

1 6 oz. Can crab meat, drained

2 Tbs. Bread crumbs

1 tsp. Cajun seasoning

Peppercorn Sauce:

1 1/4 C. Beef broth

1 tsp. Cracked black pepper

1 oz. Whiskey

1 C. Heavy cream

Steaks:

4 6 oz. Filet mignon steaks

4 slices bacon, cooked lightly

Salt and cracked black pepper to taste

1 Tbs. Olive oil

1 clove garlic, minced

1 tsp. Minced shallot

1 C. Crimini mushrooms, sliced

1 oz. Whiskey

1 tsp. Dijon mustard

Directions

To make crab stuffing, heat 2 Tbs. Olive oil in a large skillet. Sauté onion, green onion, garlic, celery, and green pepper until tender. Stir in shrimp stock, crab meat, bread crumbs, and Cajun seasoning. remove from heat, and set aside. To prepare peppercorn sauce, in a small saucepan over medium heat, couple beef broth and cracked black pepper. Simmer until reduced to 1 C., stirring frequently. Add 1 oz. Whiskey and 1 C. Cream. Continue simmering until reduced to 1 C. remove from heat, and set aside. To prepare steaks, slice a pocket into the side of each steak, and stuff generously with crab stuffing. Wrap bacon colse to side, and accumulate with toothpicks. Season to taste with salt and pepper; set aside. Heat olive oil in a large cast iron skillet over medium heat. Sauté garlic and shallot for 1 minute. Stir in mushrooms, and sauté until tender. remove mushroom mixture, and set aside. Place steaks in skillet, and cook to desired doneness. remove from skillet, and keep warm. Deglaze skillet with 1 oz. Whiskey. Reduce heat, and stir in peppercorn sauce and Dijon mustard. Add mushroom mixture, and Reduce sauce until thickened. remove toothpicks and bacon from steaks, and dispose steaks on a plate. Top with sauce.

Note: Partially cook the filets in the pan, and Desist them on the grill. This method works well with roasted red potatoes and a nice glass of wine.

Yield: 4 servings

Creamy Mashed Potatoes with Fresh Herbs

The perfect side dish to just about anything.

Ingredients

4 quarts water

1 tsp. Salt

3 - 4 lb. Golden potatoes

2/3 C. Cream

1/4 C. Butter

1 Tbs. Fresh parsley, finely chopped

Salt and pepper to taste

Directions

Bring water to a boil, add salt. Meanwhile, peel potatoes and slice in quarters. Place potatoes in boiling water and cook until tender. Drain water and mash. Add cream, butter, salt, pepper, and parsley. Serve at once. You may vary the herbs by substituting dill or chives for the parsley.

Carrots in Sherry

A sophisticated way to serve up this base orange vegetable.

Ingredients

2 lb. Carrots, scraped and quartered

1/4 C. Butter or margarine

1 tsp. Salt

1/8 tsp. Pepper

1/4 tsp. Sugar

1/2 C. Sherry

1-2 tsp. Minced parsley

Directions

Sauté carrots in melted butter, turning until well coated. Sprinkle with salt, pepper and sugar. Add sherry and simmer gradually for 5 minutes. Add water just to cover; simmer, covered, for 15-20 minutes or until tender. remove cover and cook over medium heat until most of the liquid has evaporated. Sprinkle with parsley before serving.

Yield 6-8 servings

Strawberry Fudge Truffles

These tiny goodies are perfect for a Valentine's Day gift or a romantic occasion.

Ingredients

6 oz. holder semi-sweet chocolate morsels

1/2 C. Almonds, toasted and finely chopped

8 oz. Cream cheese (at room temperature)

3/4 C. Vanilla wafer crumbs (approximately 20 wafers)

1/4 C. Smucker'S® Strawberry Preserves

Directions

In a small saucepan, melt chocolate over low heat. Put almonds in a small bowl. In a medium mixing bowl, beat the cream cheese until plane and creamy. Add melted chocolate, beating until smooth. Stir in vanilla wafer crumbs and preserves, mixing well. Cover and chill combination for 1 hour. remove from refrigerator and shape combination into 1- inch balls or "truffles." Roll each truffle in the almonds; chill truffles until serving time.

Yield: 48 truffles

Hershey Kiss Roses

This Valentine's Day, give your sweetheart a bouquet she'll truly love: chocolate!

Ingredients

10 wooden skewers or 18-gauge florist wire

Red and silver Hershey Kiss candies

Green florist tape

Silk green leaves with wired stems

Directions

Pull tiny labels from each Hershey Kiss. Stick two foil- wrapped Kisses together, lowest to bottom. Insert the skewer into the tip of one Kiss and at this point begin winding florist tape down the skewer. Add several leaves along the way.

Cherry and Chocolate Pastry Hearts

Ingredients

1/2 of a 17-1/4-oz. holder frosty puff pastry (1 sheet), thawed

3/4 C. Cherry pie filling

8 tsp. Fudge ice-cream topping

2 Tbs. Chopped nuts

Directions

On a lightly floured surface, unfold thawed pastry. Using a 3-1/2- to 4-inch heart-shaped cookie cutter, cut pastry into shapes, discarding pastry scraps or reserving for an additional one use. Place pastry hearts on an ungreased baking sheet. Bake in a 375 degree oven for 15 to 18 minutes or until puffed and golden. Cool on racks. Split hearts horizontally; fill each with some of the pie filling. Place hearts on sweetmeat plates. Drizzle with fudge topping and sprinkle with nuts. Serve immediately.

Yield: 8 servings

Tip: prepare pastry hearts; cool. Place in airtight freezer container; place crumbled paper towels colse to hearts to prevent breaking. Seal, label, and ice up to 2 weeks. Thaw at room climatic characteristic before serving.
